博士期间：主要利用从狭鳕和牛肌肉中提取组织提取物作用于牛肉背最长肌，观察肌肉组织提取物对牛肉肌原纤维蛋白和肌束膜的水解及其结构的变化，以阐明和比较狭鳕和牛肌肉组织提取物水解牛肉蛋白质的作用机理，进而提供一条生物酶嫩化牛肉的新方法。

工作期间：主要研究肉中结缔组织在肉宰后成熟期间的影响研究，提取食品原料中的抗菌、抗氧化物质，并将其应用于食品保鲜及加工中，并研发营养健康的儿童食品。
